The Ultimate Faitrade Pancakes – Pancacolonely!

For the ultimate breakfast (or brunch, lunch, dinner or snack) for my fellow chocoholics, I present to you the Pancacolonely!
A stack of fluffy pancakes dripping in the finest fairtrade and ethical chocolate, it is as tantalising for the tastebuds as it is a feast for the eyes!
Recipe:
- 2 cups all purpose | plain flour
- 1/4 cup fair trade granulated sugar
- 4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups milk (plus up to 1/4 cup extra if needed)
- 1/4 cup butter , melted
- 2 teaspoons fair trade and organic vanilla bean extract
- 1 large free range egg
Combine flour, sugar, baking soda and salt in a mixing bowl. Make a well in the centre and add milk, (slightly cooled) butter, vanilla and egg. Whisk the ingredients together. If you find the batter to be too think just add a bit more milk.
Heat a non stick pan to low-medium heat and add butter, wipe of excess butter before you pour 1/4 cup in a round shape into the pan. Flip and continue cooking on the other side when the pancakes have air bubbles showing through.

And now for the best bit:
Break up a 180g bar of your choice of Tony’s Chocolonely into a microwave safe bowl and heat on max for 1 minute. Stir the chocolate to melt it completely before drizzling, or in my case – pour the chocolate over the stack of pancakes.
Best served and eaten immediately whilst warm.
