Recipes by Babipurians: Raw Chocolate

 

Probably not what you expect to read at the start of a chocolate recipe, but I’m not a huge fan of chocolate, saying that I couldn’t say no to a chocolate fudge cake! These chocolates did get the seal of approval from my chocolate mad other half though. He kept going back for more so that says something! All the ingredients apart from the coconut milk powder (which is optional) are available from Babi Pur and you can find them >here<

Ingredients

30g Raw Chocolate Company cacao powder
30g lucuma powder
90g cacoa butter
60g coconut sugar
2 tbsp coconut milk powder (optional)

Method

  1. Grate 90g of the cacao butter. It will be easier to grate it rather than trying to cut it with a knife like I did!
  2. Start by melting the butter in a bowl placed in a pan over simmering water
  3. Stir in the cacao powder, lucuma powder and sugar bit by bit whilst stirring. Add the coconut milk powder if you want a ‘milkier’ tasting chocolate. Don’t use tinned coconut milk like I did the 1st time I made it, it turned out like some sort of mousse
  4. When all the ingredients have combined, leave to cool for a few minutes and pour into moulds and allow to cool at room temperature before placing into a refrigerator to set. I used a small heart shaped flexible silicone mould. These made the chocolates easy to pop out when they’d set. You could also use ice cube trays

This a really simple recipe and is perfect if you’re looking for a sweet dairy free treat. You could also use different shaped moulds for different occasions, I’ve used an Easter egg shaped mould in the past. These would also make lovely little gifts wrapped in brown paper and tied with ribbon or string.
